Of the two you mentioned I have the Garmin Virb and I like it. My wife has the GoPro and she almost never uses it. She doesn't hunt, she spends a lot of money on horses {lead, feed and talk about/endless le$$ons}.
I like the shape of the Virb. It is easy to carry and use and the sound picks up way better than I thought it would. One thing to watch out for with either of these cameras and many other digital cameras {because just about all of them have video capability these days} is water/weather proofing. All any of these little cameras have to do is get rained on and they are done. I mean, it's not as if you have to dunk them to ruin the camera, just get it wet.
I bought the waterproof case for my Virb and it works great and is not a great big hunky thing. I would also suggest you look at the Olympus T-4. it is completely waterproof right out of the box and takes excellent video as well as photos. Cost more than a Virb but not more than the GoPro. You don't need a special waterproof plastic box to insure it wont get wet. I dive with mine. It is worth every penny.
The only other advantage with the Virb is that it has a neat action mount you can put on your bump cap {or other places} and it's not as obnoxious as the GoPro mount.
