Here are some tips from another site:
I ate wild turkey until I hurt last night. As soon as I get through cleaning a turkey I let it soak in a bowl of salt water for a day or two. I then cut into strips and marinate for a couple of hours.
1. I use two eggs, condensed milk, salt, pepper, Tony's, a couple of spashes of Dale's, and a dab of olive oil for my marinate. I mix all of these ingredients real good in a big bowl and drop the strips in. A couple of hours will work or a day is fine. Batter the stips in self rising flour. Get the grease hot and enjoy. I like my strips thin so when they start browning they are done.
2. For legs and thighs I make a mean turkey salad. Boil of the bone in a crock pot, tear the meat apart and mix boiled eggs chopped and chopped sweet pickles with mayo.
3. Another recipe I do is cut breast into chunks, marinade in zesty italian dressing for 2-3 hours, wrap in bacon w/ toothpick, and season with garlic southern flavor (a local dry rub), and grill. Bucky Barrett, Al
4. Cut it in strips as you do chicken tenders, and then again into pieces like stew meat. Marinate over night with salt, pepper, Tony's ( applies to folks South of Quitman ), Italian dressing and Allegro Hickory Smoke Marinade. Make a roux in your favorite black iron pot, then add onions, bell peppers, garlic to taste and simmer. Add marinated turkey and combination of chicken broth and beef broth to desired consistency of gravy and let 'er cook slow for about 4 or 5 hours. Serve over rice and look out! My favorite! 5. Try it this wayI
ngredients:
8-10 wild turkey strips from breast
1 beaten egg
1/2 bottle ranch dressing
1 1/2 - 2 cups bread crumbs
1/2 cup Parmesan cheese
2 T. Olive Oil
Instructions:
Add egg and ranch dressing. Mix bread crumbs and Paremsan cheese. Dip turkey strips in egg mixture. Then rolls in bread crumbs/Paremsan cheese mixture. Place olive oil in non-stick fry pan. Make sure olive oil is hot before adding strips. Brown turkey on both sides and cook until turkey runs clear. Jonathan Barnes, SC
