Not a good idea to hunt a dog on a full stomach. Feed dogs after hunting when their digestive system is more efficient. Deep chested dogs are more prone to gastric torsion. Feeding meat based diets vs cereal based diets has decreased the incidents in deep chested dogs. You can add water to the dry food to improve hydration and slow down the eating process in most dogs.
Coonhound paralysis and blastomycosis are totally different types of diseases. CP usually causes dogs to become weak in the back legs and unable to stand for days up to weeks. It can be life threatening if respiratory suppression occurs but usually resolves without therapy in 2-3 weeks. Blasto usually leads to respiratory disease in 85% and other systemic disease in 20-40% of dogs. From Pet Education Series:
"The symptoms of blastomycosis in dogs include lack of appetite, fever, depression, weight loss, coughing, eye problems, lameness, or skin problems. Signs are usually present for a few days to a few weeks. The disease can wax and wane with the severity of the symptoms improving slightly and then worsening again.
Up to 85% of dogs with blastomycosis have lung lesions and accompanying dry, harsh lung sounds. Forty percent of dogs with blastomycosis have eye lesions including uveitis, retinal detachment, and hemorrhaging into the eye. Skin lesions are found in 20 to 40% of the infected dogs and are often ulcerated and draining. Bone involvement and resulting lameness is present in about 30% of infected dogs."
I saw a dog last year that had Coccidiomycosis (Valley Fever) with spine involvement that had a hard time getting around in the rear legs. You can run Blasto titers and PCR tests to rule it out.
Blasto is treated with a combination of antifungals. CP is treated with supportive care. Steroids may or may not help. Avoidance of coon saliva/bites is preventative.
