BOILED PEANUTS,

Ive always considered myself to be a authority on SOUTHERN FOOD, so I hesitate to admit this, I have never ate boiled peanuts. Peanuts are real, real, big in the eastern part of Va. They are a major crop along with tobacco and soybeans. But here in the western mountains of ol Va. corn is the biggest crop [and its feed for the beef and dairy cattle mostly, some gos to other uses as well, [ha, ha] if you know what I mean. cold medicine and such.] Anyway, when Im down in east Va. [below Richmond], or when Im down yalls way Im gonna try some of them boiled peanuts. Sounds good yall, and GOD BLESS YALL ALL.

Like grits, some love em, some hate em...but there is a big difference in them when they are done fresh and at home. I like them sometimes but not all the time. Just a seasonal thing with me...just after they are plowed up, picked off the vines and done right then. Now I can eat that grass fed beef every day! Peanuts are not the big row-crop here in this county they once were. Lots of it going on elsewhere though.

Not to brag.....I boiled some Sunday. Brought some to work here at the John Deere store and was told they were the best they ever had. How cool is that?!

Boiled peanuts

This came off the internet... but this is the way it's done by us.

Difficulty: Easy
Instructions
Things You'll Need:
5 lbs. "green" peanuts in the shell (green refers to the peanuts being freshly harvested)
Approximately 6 qts. water (enough to completely submerge peanuts)
1 cup salt per gallon of water
Step 1
Get a hold of some freshly dug peanuts for the best and most authentic taste. Newly harvested peanuts also take less time to cook.

Step 2
Place the peanuts under cold, running water, swirling them around to ensure that all of the peanuts are washed. Keep them under the running water until the water turns clear.

Step 3
Place the peanuts into a tub of cold water. Let them soak for 30-45 minutes.

Step 4
Place peanuts in cooking vessel and immerse completely in water. Add 1 cup of salt per gallon of water used.

Step 5
Cover peanuts and cook on high heat (or an open fire) for about 4 hours. After 4 hours, begin tasting every 20 minutes for desired level of texture and saltiness. A good boiled peanut will be soft, but with a slight firmness.

Step 6
Drain peanuts completely after cooking is completed. Enjoy hot or refrigerate

That recipe is close but 4 hrs is way too long. You don't cook Pnuts to come out with the right donness and saltiness at the same time unless you're real lucky. Put a whole carton of salt in about three gallons of water and maybe a teaspoon of baking soda for good measure. Cover with enough water so as it boils out you don't need to add more. Don't add more water, take out some pnuts and feed those to the squirels. After an hour start tasting for doneness. When right, take off the fire and start tasting for saltiness. Pnuts don't take up much salt untill they start to cool down, so take a taste every few minutes . They can get too salty in a hurry. Hence the reason don't add more water while cooking. When right quickly poor off water , let air cool a little and then refridgerate.

In commercial pnuts youre looking for maximum tons per acre which means those will be over mature even though they are "green". In fresh market nuts, the are looking for the majority of the nuts on the vine to be at the perfect maturity with veryy few , if any, to be filled out hard. That ruins the whole batch for pnut conoseurs. The local graders manage to get those picked out along with pops,insect , disease broken, etc. These local producers manage to put together a product that you can eat every pnut in the bag.

A pnut that you crack open and the nut cracks in half and sticks to both sides of the shell is way way overmature. A nut that the shell comes off one side but you have to dig it out with your teeth is overmature. And if you have a good percent of those in the pot they either won't get salty enough or the good ones will be too salty.

Pnuts peg in the ground as the plant grows. when they start pegging thats when to apply landplaster. It helps avoid pops and sweetens the nuts. You never see pnuts grown on black plastic for that reason. The trick is knowing when to dig knowing if they wait, they'll make alot more nuts but the locals around here are finicky about boiled peanuts and if they get a bag that's not perfect they won't buy anymore till they figure that the producer has moved to a younger field. So producers around here make certain they don't let a bad batch hit the stands.

I prefer to buy them already boiled. I do a pretty good job but the ones I grow in the garden are likely to have more pops and disease. I can buy them green and graded from the producer but they cost almost as much as his boiled ones. And they sure know how to cook them.

I agree...4 hours is way too long. I cooked a bushel on Sunday...inside...for 2 hours or so. I turned them off and let them sit in the water for a while....you have to taste them as you go....Just try it! There are the bomb!

I do all my cookin on the internet Reb! In real life I heat up in the microwave. Thank goodness there is a real southern cook here that takes pretty good care of me! BTW she just informed me that four hours is in fact too long to boil them nuts! What the heck do I know anyhow!

Locally grown the spanish pnuts (red ones) start getting dug in june. They are planted a bout a week apart so that's what you get till the end of July. Then the white North Carolina varieties (NC 3, NC4 etc.) come in and last though august. By the time you realize you want to put a bushel in the freezer for winter. They might be starting to get hard. I'm Glad you asked , I think I'll go get a bushel tomorrow. They keep good for Super Bowl. Just heat them up in slightly salty water but don't let them stand in it because they are already right.

WHEN MY KIDS WERE YOUNG I TOLD THEM THAT PEANUTS GREW UNDER GROUND THEY SAID NUTS GROW ON TREES. SO I GOT SOME RAW PEANUTS PLANTED THEM GOT 4OR 5 VINES TO COME UP GOT A HAND FULL OF NUTS . DIDNT DO WELL IN THIS HARD GROUND . THINKING ABOUT DIGING A DEEP TRENCH AND FILLING IT FULL OF SAND AND COMPOST THEN PLANTING A ROW ACROSS THE GARDEN. THINK IT WILL WORK?

You know I meant to ask Cleo where she got a bushel of peanuts on the vine this time of year. Too early yet here. What do they do? Keep in cold storage? The peanut boilers always have some on hand. If we can catch em digging we usually can get a few to pick off and boil. Just pick off the best and toss the rest. We have never frozen any that I can remember. I wouldn't think they'd be as good.
