Great thread !!! I like all of the meats but I can't go them sardines or blind robins . Scrapple, ponhaus, pudding , its all good . I tell my grandkids ponhaus is pancake from a pig . My wife used to love potted meat and v a sausages till I read her the ingredients. I have been eating eggs all my life and my cholesterol is fine . She never eats them and hers is terrible . I think its genetic .

i enjoyed poke salad once. it had bacon grease and sliced boiled eggs. it was good. of course, bacon grease makes crap taste good, i'm told.

After reading this I did a search on Poke salad. It sounds to me like it's similar to Dandylion salad I grew up eating that we pick dandylion greens in the spring and a put hot dressing over them that's mostly vinegar, sugar, bacon grease and chuncked up bacon.
We have plenty poke weed around here I'll probably try it. How/when do you harvest it? I know some of the plant is poison at certain times of the year.

Just boil it once pour the water off then boil again pour the water off you will be fine sombody told me they cut up the stalks roll in cornmeal frie like okra I just don't know if you boil it first anybody heard of this grandma always told us because when I was a kid we went barefoot so much we got worms she said ( poke) salad helped with that what y'all think!!!!!

Old school pork by products (head meat, liver' heart,ect) ground into what we always called "puddin meat". Then you cook up a big pot of cornmill mush and mix the puddin meat into it. Then you pour that into bread pans and refrig. so it sets up in loafs. At that point you slice it and skillet fry it. I've heard people all over the country eating it different ways my traditional way is with homemade maple syrup or corn syrup "never Aunt Jamima" LOL".

LOL you should try it once before you pass judgement It really is very good and you don't have to make it old school. It's sold in the supermarkets and some of it aint bad. It's usually in the area where the cheeses and other dairy products are. Frying it does take a little bit of skill you have to do it slow and just start to brown it, you can overcook it if you turn the burner up to high.
