Hoop cheese? Is that the key? I have heard of it. Don't know if the chef uses it in her pimento cheese or not. I know she has her preferences on cheeze according to what she's making though. Love those pimento cheese sandwiches. Bread has to be fresh though. Sure can't buy it as good ...even in the store deli's.

Hoop cheeze is just a fancy term for rat cheeze. Whenever the local veterinarian was down this way he'd beg two slices of white bread, then order 1/4 lb of balogny and 1/4 lb of rat cheese and a pint of half and half and that would be lunch. It was lunch if it came in between slices of bread but it would have been dinner otherwise. Especially if he had to cut it with a fork. LOL

Not by that name. We put it in a sandwich along with tomato and whatever. Sometimes just brown it and put mustard on it and slap it between two slices of bread! You'll have to tell us how you do it.

BTW...on our morning walk, sweet thang and I do every morning ( we leave at 6 and do 2 1/2 miles every morning) That's how she keeps that girly figure! I mentioned the cheeze to her and she woke me up about it. She said it was "Rat Cheeze ..that kind that comes comes in the big round boxes and you cut off however much you want with the cheese cutter. "

See she was a town girl but she stayed down there on the river with 'Big Momma", "Pop", 'Nunna" and "GranMa" all the time. Pop had a county store and had all that kind of thing. The "cook" learned to cook from the old folks as a small child and learned to be a "Country Girl" with all the livestock and all.

That brought to mind that I myself worked at a grocery store as a teenager and I learned to cut a pound of cheese and wrap it pretty good during that time.

Wonder if you can still buy it that way?

That's right we HAVE lost a few that WERE having a good time along with us. I'm totally puzzled by it myself! I thought it was very intertaining even if we did stray from the original subject line along the way.

Ain't the internet wonderful? Look what i found!

Wikipedia

Hoop Cheese

Hoop cheese is a firm, dry cottage cheese , similar to farmer’s cheese in that most of the liquid has been pressed out. It is different from farmer’s cheese in that farmer’s cheese is made with milk , cream and salt , while hoop cheese is made from milk alone.

Hoop cheese is difficult to find commercially in the United States, due to the difficulty of automating the manufacturing process. It was once so popular, however, that a device called a hoop cheese cutter was manufactured and used in general stores during the late 19th and early 20th centuries. This object resembled a turntable with a knife blade suspended above it. It was built by scale companies of the period to cut the exact amount of cheese the customer wanted.

Hoop Cheese can be found at many small restaurants and independent gas stations and grocers throughout the south.

The only 'possum and taters I ever ate was done by my Great Aunt who could cook anything wild. It was quite good. She did turtle one time too! It was better. Crawfish tails ( Note I did not say Crayfish) are good too. Even had some goat one time. Old foks here called Bass 'Trout'. Never hear it anymore. Bout all passed away I guess. Small Bass make a good 'Dinner' or 'Supper'!

I like mine with mayo, pickle and lettuce. Sam likes his with home made cole slaw.

Ya know what they say...Everything is done slower in the south
