This one is for Corky since he has the

sweet potato's and yall thought I was going to same something about them Black Tans

Baked Possum and Sweet Potatoes
2 young possums, 2 1/4 to 2 1/2 lbs each, dressed weight
1 baking potatoes, 1/2 lb
7 cups cold water
2 lbs sweet potatoes or yams
4 tsp salt
3/4 tsp black pepper
1/8 tsp red pepper
3 tablespoons flour
1/4 cup cold water
2 cups possum broth
Parsley
Clean possum carefully and remove scent glands and any clinging hair.
Pare Potato, wash and cut in quarters lenthwise,
Lay potato inside possum.
Fit into a 5 qt kettle.
Add water, cover kettle but leave open space on one side for steam to escape.
Heat to boiling and boil gently 15-20 minutes; then skim froth that collects;
pour off about half the both.
Add 3 cups fresh hot water,
return to heat, again partially cover and boil gently until meat is tender, but not tender enough to pull away from the bone.
Remember possums will not become more tender after they are placed in a roasting pan,
Sprinkle outside well with the seasonings that have been well mixed in a coup.
Make gravy by sprinkling flour over cold water, mix to a smooth paste, then blend with 3 coups of broth drained from kettle in which possums were parboiled.
Mix and pour around possum.
Arrange pared, washed sweet potatoes around possum.
Cover pan and bake until possums and potatoes are about tender .
Now uncover and bake until possums and potatoes are tender and beautifully browned or from 35-40 min.
Baste every 10 minutes with the gravy in the pan.
Remove meat and potatoes to platter and garnish with parsley.
Pour gravy into separate dish and serve meat and gray piping hot.
Makes 5 to 6 servings.

Had this. I served it at my companies Christmas party one year....one of those "everyone bring a dish" deals. The dish was empty when I left. Til this moment, I never told anyone what it was.....

Update on my truck. Mike just brought me my keys....it was the hub assem. It had broken. There has been an angel riding along side of me.....

I had it too....years ago on New Years Day....it was grilled and they told me it was rabbit..... If I remember correctly, it didn't help my handover one tiny bit.

It got bigger and bigger as I chewed. I do remember that part of it.

Saturday Night: Occasional rain, mainly after 1am. Low around 39. Southwest wind between 5 and 15 mph, with gusts as high as 20 mph. Chance of precipitation is 80%.

Sunday: Rain, mainly before 1pm. High near 46. Windy, with a northwest wind between 20 and 25 mph, with gusts as high as 35 mph. Chance of precipitation is 80%.

Sweet Tea n COLD

Well Hello everyone! First of all.. I thought of ALL of you this am...got a flyer from McDonalds AND... it had a coupon for SWEET TEA! First time I"ve seen that round here! AND... it was a BALMY 8.1 this morning at the house... have NOT looked at what it was on the cam out back... it is always colder there. It was the most AWFUL winter cold experience this morning as I stuck walnuts into the woodpecker feeders. My fingers were so COLD... I kept going into the garage to warm up...and going back out to keep going... Even Web did NOT want a walk!
I have never had possum or coon... but surely will try it if someone else cooks it. I TRIED butchering coon one time and couldn't get past all that...FAT... grossed me out SO I just don't wanna see it raw...LOL...
Cleo! CONGRATS on the Beau! Hope he is a keeper!!!!!

YESTERDAY... Spent the pm in Boston with my mum at the eye drs. It was a LONG appt... we were there over 2 hours! They did all sorts of tests and scans. SOme results will be in this pm. IF there is swelling behind the retinas they can help her a bit at that Drs. The bigger concern was that her glaucoma surgery has stopped working and this Dr is now sending her back to the glaucoma specialists... SIGH. We had a WONDERFUL time and a GREAT visit after. It was VERY cold yesterday but WAY warmer in Boston than in Wrentham. I had wicked flashbacks at the Drs office. The building used to house my fathers office Before I was born AND aLOT of our Drs were in the building. Waiting for the elevator I kept trying to recall which Drs... and I couldn't. Unfortunately, now that Mum is 91... her memory is FINALLY not so great and she couldn't recall either...LOL... Drove me nuts, I HATE not having a good memory!
SO... I'm here today and I have EVERY intention of staying inside till pm chores! I bet I'll nap... fell asleep before the Bruins game ended last night...LOL....
If you all could say a little prayer for my dear friend from SC today.... he is arriving at the hosp. this moment to have surgery at 10:30 to remove his ailing gallbladder. He is a fellow coonhunter and board member, I won't say who he is... since I'm not sure he's telling everyone... But I'd love all of you to ask that God keep him safe in his surgery and healing. He has suffered terribley for too long with it...
