OT - need deer burger ideas

anybody have any good seasoning ideas for making deer burgers? We have tons of burger in the freezer and since hubby is now on a low fat diet I'm trying to get him to use it in place of hamburger. But he doesn't really like the taste, so I'm looking for ideas of spices, seasonings to add.

WHEN WE GRIND OUR DEER UP AFTER THE SEASON WE MAKE IT 50/50 WITH BEEF. THIS HELPS IT TO NOT DRY OUT. TASTES GOOD ALSO. PLUS PEOPLE WHO WILL NOT TRY DEER MEAT CAN BE TRICKED INTO EATING IT. I WILL MIX A LITTLE LEMON PEPPER WITH MINE.

PEG---You can't shoot one until fri. ---lol lol lol ---when I did hunt them I didn't like the meat that well either----old timer told me to mix beef -- not pork-- you can keep it DEER and BEEF in the freezer longer

We use it in anything and everything you would normally use ground beef except "hamburgers".

Chili, Tacos, Spaghetti, sloppy joes, etc. Also use it to make jerky out of too.

Just don't Over Cook it !! about a 1/2" Deer Burger takes about 3-4 min. per side or less to cook it .. Any longer just bring out any undisirable flavors ..


If you can find it "Badia" Fajita Seasoning (Food lion and some Mexican Markets Carry it)

This is one of the Best Spices I have Found !! You can make great burgers , Tacos, Steaks ..

Only draw back to it "Which I noticed yesterday while Ordering on line (3 #s) It has MSG in it .. Which doesn't bother most fokes but I will get very bad Migrains from ... But we have eaten Mule Deer Tacos 3 nights this week and haven't had a Migrain so It can't have a whole bunch of MSG in it.. Heck a hand full of BBQ Chips can lay me out for 1/2 a day so they must have alot more MSG..

Take the deer burger, a few slices of onion and some barbecue sauce or whatever kinda sauce you like. Make a pouch out of some aluminum foil. Put all three in the pouch. Cook it until it done enough for you and ENJOY. I dont ever eat the onion but it give it good flavor.

mix in some bread crumbs and coke for burgers or grind in some bacon for fat and a smokey flavor.

makes great chili. when we grind our deer we run a couple slices of bacon per pound through the grinder, adds great flavor.

One of our favorites is Chopped onions, chopped green peppers, One or two eggs,Italian seasoned bread crumbs,salt and pepper.Can't say how much as I just put it in till it looks right to me.Mix good in a bowl . Shape into patties or round shapes and Brown well in skillet on all sides.Make some pan gravy or add store bought.Cook a little while longer after making gravy.
We also use meat for stuffing our fresh garden picked green and hot peppers.

those bacondeer burgers are great,,we grind bacon ends/peices with the deerburger and you can eat it with your eggs in the morning and every meal and not get tired of it,,

bad thing is you will run out of it quick if you dont watch your stockpile..

donate to me and I'll be happy to buy beef. hubby lost his job 2 years ago and they just cut my hours, have to live off what we can afford.

He's not been able to find another job in two years? Wow that's terrible I guess I'd learn to either make venison burger taste good or move to another area with more work.

Make it into jerky if it is real lean meat. Ground venison works for jerky but if it has much venison fat or gristle mixed in it is less tasty.

When I do jerky that way I mix in brown sugar, soy sauce, smoke juice, black and red pepper. The proportions can be figured out by looking up some recipes for jerky. If I had a jerky gun I would do that but I pat it out about a half inch thick onto wax paper and use a butter knife to divide it into rectangles then put into the dehydrator.

For a standard meal I would mix in some lean chunks of ground bacon and add onion soup mix to make meat loaf or burgers for the grill. I hear you on going low fat so trim all the greasy fat off the bacon and only add the meat. Maybe mix in some canola oil to the mix if it is to lean to cook right. Save the fatty chunks and send them to me.......LOL I really don't need them either but I do like the flavor.

Hope you find a way to eat up your venison and for all those needing work I pray that things pull together so you can get back to normal.

That's all I use burger for is jerky. Sounds like some good ideas. I just heard on the news today that most of the temporary jobs created by the stimulus money are ending so unfortunately things may get worse before they get better. Hang in there better days are coming.

Mine has been out of work for 2 years now as well and even though they aren't cutting my hours they also have not given out any sort of raise in the last two years.

Meatloaf - you will need to add some ground pork or beef cause you need the fat to help hold it all togther. mix it with egg, seasoned bread crumbs, add in some italian seasoning, spaghetti sauce (instead of ketchup), Garlic and Onion. About 5 minutes before it's done coat it with a layer of BBQ sauce. My family love this
