jesse when we smoke fish and turtles in in iowa ,we use charcoal and some soaked apple or cherry wood as well ,taste great

i have both a gas and charcoal and i preffer the gas. way easier to control the heat. and you get the flavor and moisture from the chips you are using to smoke with any way.

Gas is alot easier and quicker but I prefer charcoal, it makes the food taste alot better.
