Nasty stuff out there, huh Liz! The heaviest weight chap material you can get works good.
I've got the heavy black Tejas chaps on my Mucks, but they don't make them anymore. I've heard Dan's and Yoder do.
As far as wader boots go, the Mucks have been the only ones I've ever worn that were comfortable and have NEVER given me blisters. Two things I don't like about them -- they're slicker than snot on wet logs and rocks and they feel like walking in moon boots (remember those?). A little while of picking those boots up to climb over knee-high briars is a heck of a workout. Nice and comfortable for hours of walking the roads and open country out there though.
If I didn't have to worry about keeping my feet dry, I think I'd be tempted to go with comfortable hiking boots, heavy chaps, and heavy gaiters.
