Can a youth cast be assembled at a trial like the senior cast used to be?

Understood but one of the things that might easily come into play is; you have three youth hunting in the registered division, one in the Champs, and one in the Grands. By the "three handlers in the same category" rule the youth hunting in Champs and Grands are the odd ones out. The other item is that all youth casts must have a non-hunting judge. NHBA Youth Points might also come into play so a level playing field might be a concern?

Probably no reason why you couldn't run a youth cast after the official hunt ends. Or at least separate from the official hunt.
