Ingredients
--------------------------------------------------------------------------------
1 cup grits, or cornmeal
4 cups cold water
1 tsp salt shopping list
¼-½ tsp ground black pepper
2 lbs pork liver, sliced
4 eggs shopping list
sage to taste
salt and ground black pepper to taste
ground cayenne pepper to taste

How to make it
--------------------------------------------------------------------------------
Melt lard or shortening in a large, heavy skillet over medium heat.
Season liver with salt and ground black pepper to taste.
Sauté liver in lard or shortening until done through.
Remove liver from pan, drain and cool.
Place cooked liver in food processor and finely grind.
In a large sauce pan bring 4 cups water to a rapid boil.
Add 1 tsp salt, ¼-½ tsp ground black pepper and grits/or /cornmeal.
Cook until grits/meal mush is very stiff.
Add eggs, cayenne pepper and sage to taste and ground cooked liver and mix well.
Re-season the mixture as necessary.
Place the mixture in a small, greased loaf pan.
Bake at 350 for 50-60 minutes

Start out with small amounts of the seasonings, play with it untill you find what suits your taste, thats why i didnt put an amount in!!!! Enjoy

im glad im up here in these hills i wont get hooked on that liver mush lol when i was on the road i use to stop at alittle restaurnt on 220 going into eden nc to get my load of beer and fill up on them grits lol

when i first heard livermush i thought, No way. when i read the recipe i thought, sounds like meatloaf with liver. i like liver and onions too and liver loaf is something i'd like to try.

Go to the meat counter and look for Neese's Liver pudding it's the same thing as what they are calling mush. Down South it's called pudding.

LOL it's the "other stuff "that gets me about it. I'd as soon have rice. The "other stuff" might be the casings of another hundred pounds of Liver Pudding LOL BOut made me gag from Heck. Rat sweepings and who knows whatever else gets in it . Good one is good but a crackerdog or a goyander piece of crap can make me puke my guts out.
