YOU EAT THE COON JAY AND I WILL EAT THE REST. I HAVE TRIED COON COOKED MANY WAYS AND STILL DON'T LIKE IT. MAYBE YAZOO COUNTY HAS THE RIGHT RECIPE.

My old hunting buddy makes coon bar-b-que. Going to have some after the first young coon is down! Mighty good, mighty good.
My Mamaw used to bake a young one. Not sure what she put on it, but it was good.

If cooked right, coon taste just like beef pot roast. Personally, I am not a pot roast fan. That is why after I get it that far I bar-be-que it. I cooked up 2 coons for Christmas party at the University where I work. Everyone from my department tried my raccoon, and had nothing but good things to say about my bar-be-que raccoon. In fact, it was the first dish gone!
