OT...pulled pork and rib recipes
im lookin for a few good injection recipes for pork shoulder or boston butts. also if you have a good sauce, mop, or dry rub recipe...post it here..
my buddy rockie gave me a great rib rub and mop recipe ill post later on.
lookin for sweet and spicy both..post what you like

if it aint broke, fix it till it is...
sauce,3/4 cup apple cider vin.
1 1/4 cup ketchup
5-8 tbl spoon DARK brown sugar
1 tbl spoon yellow mustard
1 teaspoon salt
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
teaspoon black pepper
tea spoon of liq. smoke
2 tbl spoon worcheshire
2 gloves garlic (minced fine)
3 table spoons of onion )minced)
saltue onions and garlic in a little olive oil until tender,add rest of ingredients and simmer 45 mins.
adjust measurements to taste.like sweet add more sugar,hot add more cayenne.
will get a dry rub up tomorrow
Already too hot around here to be eatn that kind of stuff. I'd have to stay in the air conditioning. I'll post some this fall when I can stand to think about it. LOL
For a whole pig:
1 gal apple cider vinegar
1/2 cup salt
1/2 cup sugar
1 stick butter
1 small can black pepper
1 small can crushed red pepper
1 tbs rubbed sage
bring to a boil and simmer a few minutes

easy dry rub
equal amounts of salt, black pepper, brown sugar, and paprika.
mix well with hands. Taste, add stuff as needed. Rub meat, grill, ENJOY!!!!!!!!!

Bill Chew hit it on the head Down EAST N.C style ,the best
bill chew, do you know how i would cut that recipe down for just a few butts or racks of ribs..i dont need that much not doin a whole hog.

all purpose rub,works well on about anything
1/4 cup sugar
4 table spoons paprika
2 " " " black peppper
1 " " " onion powder
1 "" "" "" garlic powder
1 "" "" "" salt
1 teaspoon cumin
1/2 teaspoon cayenne
1/2 teaspoon ground thyme

You can cut the ingredients down in porportion and it will stay the same. It also has a long shelf life if kept in a closed jar.

Bearhunter, that dry rub is close to what I use. My wife's cousin from Somerset, KY gave me a sample of what he uses with his event catering business and I figured out most of what he had in it.
Up here we smoke our butt roasts over apple wood or else with maple and corn cobs used if we don't have apple on hand. With all the apple trees that get trimmed or cut down each year apple wood is easy to have on hand.
I like using a mix of apple and hickory.Apple is hard to come by though.
