Southern Cooks

OK I cant stand it any longer IM GOING TO DO IT I need a good recipe for COON
I was watching a TV program last nite and they were eating COON and it looked real good!!! GOT TO TRY IT !!!
Im just a **** YANKEE never ate none of that good ol southern cooken
Does ANYONE have a good FAMILY recipe they would be willing to share

Jeremy here is your coon recipe

1 coon 4-10 lbs. before cleaning
cayenne pepper to taste
black pepper to taste
salt to taste
1 large onion chopped
1 cup chopped celery
1 bell pepper seeds removed and chopped
flour for gravy
lard or shortening for gravy and browning coon
6 peeled sweet potatos
after cleaning coon be sure to remove glands from under front legs they are about the size of a pea.soak the coon for 1 hour in salt water.drain.cut the coon up or cook whole as desired.salt and pepper coon and cover with water.add cayenne pepper,onion,celery and bell pepperand parboil until partially tender.remove from heat and drain.brown coon in a small amount of lard,then place in roasting pan.make a thin gravy,season to taste.pour over coon in roasting pan and place peeled sweet potatos around and bake in 350 degree oven until sweet potatos are done.

Boys it is good had it for supper sunday

I'm a cook from the south but that desn't make me a southern cook. LOL. I've tasted/eaten coon three times in my life. One was pretty good, the other two horrid. You got to start by getting the glands, whatever that is, out. That's all I'm sure of.

I've heard there are four or six glands. Not sure if that's just for a boar coon. LOL

Jeremy a average size coon is best 4-10 lbs before cleaning.There are 2 musk glands on all coon,1 under each front leg,they are about the size of a pea.If you don't get rid of them you coon will taste so bad the dogs won't eat it.

We have done pretty the same recipe as glynndawgs63 except for using white potatoes. We also have always cooked ours in dutch ovens on an outside open fire...We serve it open faced on Texas toast, browned on both sides in a cast iron skillet with a little butter... Like ya do grilled cheese samitches.


During wild game cookouts that the guys have. They just sprinkle a little meat tenderizer on it. Wrap it in some bacon. pour "a little bit" of Italian dressing and "a little bit" of bbq sauce on it. Wrap it up in a couple of layers of foil and smoke the heck out of it on a "low" steady heat (no lower than 250 to no higher than 300)..About 30 minutes before you serve it, open up the foil and crank up the smoke a little bit...THAT IS SOME GOOD STUFF...But, it is for the die hard, grilling kinda guys. If ya don't have the time, it won't be any good. Eats real good right off the grill or pulled and served with slaw on a bun...NOTE: When you are smoking or slow cooking on the grill, ya don't use direct heat. Cook off to the side of the heat...

There's plenty of other MUCH better stuff to eat besides coon. Just cuz it's there doesn't always mean you should eat it!

LOL. If it was good to eat, it wouldn't need to be wrapped in bacon, then drowned in Italian Dressing, then BBQ sauce, then smoke lol. Anything that needs all that treatment is something that never tasted very good to begin with!

Yeah, I guess you could look at it like that...But, if that was the case, what is the purpose for recipes?

That's what I found out about the southern geese that's taken over around here. Parboil goose-thow goose away - keep the broth!

after skinnen try & get as much fat off as possable, soak over night in saltwater, quater the coon up , boil until tender,take out of water, let cool to touch, roll in your choice of flour mixture, and fry. goodeatin

If you want to know what it tastes like without actually eatin one, Take the sole off of your tennis shoe, put some cold lard on it, close your eyes and stick it in your mouth and start chewin,,,,,,,,,,,Coons are NASTY. My dad was the " TOUGH GUY", Had my mom cook him one, He told her how to cook it, She did and he took one bite and threw up all over the dining room. I seen my dad eat and drink stuff that would make a goat die, And a coon made him puke. DON'T TRY IT BUDDY!!!!!!!!!!!!

Well... nothing should be killed without a purpose behind it. Killing to kill is pointless IMO. I was taught to eat what you kill, and I always will. Now with a purpose i mean that i will shoot one out to the pups, or shoot a oppossum or squirrel thats eating my garden, or coyotes terrorizing the calfs... you get my point, that is also killing for a purpose. But I can't justify killing a coon unless its for the pups or im gonna eat it. Thats why i very rarely shoot one unless its in the winter. But here is my recipe:

Soak the coon for at least a day in water or salt water
Then marinate for another half a day in cooking wine or dale's
Cut in half, stuff apples, bellpeppers, or whatever you like in the cavity.
Put whatever seasonings you prefer on it
Slap it on the smoker for 3-5 hours
Then put it in a pan with with tinfoil
Add water, put some more dale's on it and add potatoes
Bake for a couple of hours until nice and tender with the tinfoil sealed to keep the juices in
It's pretty dang good

And by the way, DO NOT forget to remove the glands!

HAD SOME A COUPLE TIMES MY BUDDY'S WIFE BOILS IT THEN PULLS MEAT OFF OF BONE ADDS PEPPERS, ONIONS, BBQ SAUCE AND SERVERS WITH RICE.
