Can be DELICIOUS
I've had GREAT wild caught hog in Texas but I don't have a CLUE about the secret to preparing it to be cooked. I've been told there are certain procedures to follow - so evidently, what I've eaten was caught, butchered & prepared for cooking by people who knew what they were doing.

Do the wild ones not taste like the tame ones?
Flavor of any hog will depend on its age and what it has been eating. It will also depend to a degree on what your own tastes are or tolerance of flavors. You should do a google search for roast hog recipes and start from there. If you know anyone who has some experience doing a hog roast that is a good way to eat it up and have a crowd over. I like a hog to be in the 100lb range, corn and acorn fed and prepped with a dry rub (my secret recipe) and roasted over Kingsford and apple wood.
Nope, they have a strong taste, that is the only way I can describe it.

We skinned it like a deer and cut it up much the same way,it did have a strong odor and being a boar it may to "gamey"we were advised to make sausage out of him.We love deer and turkey,in the case of turkey, wild tastes way better than the tame ones
only way to go is sausage. best you wll eat made into sausage

I would not mess with a boar hog of this size. What I'd do is take a piece of the meat you've got cut up and put it in a pan and fry it if it has a bad odor or smell to it I would not eat it. really you want be ably to eat because it taste like it smells.jmo.
here's one I killed during our blackpowder season

estimated somewhere between 400 and 500 lbs.

wild hog is some of the best game meat out there, prepare like you would anything else. take it to a processor and like troy said it will be the best sausage you ever ate.

huntingnick, that hog looks like he's nearly all Russian
thats what we thought, we have killed several over the last few years, but this is by the far the largest and all the others were colored like tame hogs, spotted, white, black.
congrats to your boy on his hog kill.
I wish we didn't have any hogs, they sure do a lot of damage to the pastures, and compete with the deer and turkeys for acorns.
