I restore a lot of old double barrel shotguns and classic rifles. I don't know how nice or fancy you want to go but I have had very good luck with Birchwood Casey walnut stain and Tru Oil. It produces a very nice rich reddish brown color and the Tru Oil drys quick and holds up to wear as good as any. The tru Oil actually soaks into the wood so the finish is in the stock not just sitting on top of the wood. If you really want it to look like a pro did it, after you finish with the hand rubbed Tru Oil you can get it in a spray can. The secret is to heat the spray can up by running hot water over it and repeatedly shaking the can. Run more hot water over it and keep on shaking it until the can feels warm from the liquid inside. This helps it to wet out smooth as glass when you spray on the final coal. Good luck.
I've used Minwax with good results.
