Bbq Battle!!

were having a battle on who makes the best BBQ.the guy from up north that I deall with thinks they do.but ofcourse every body knows that us Southerners has the bets BBQ!!

BBQ Guy, where are you from. I live in west central Illinois also. I'm a KCBS Master BBQ judge. I assume you coonhunt? What do you hunt?

Oh Outback1, The KCBS BBQ team of the year is from Illinois. That team also won The JACK, which is considered the World Championship of BBQ. Of course that is Competition BBQ.

They don't do whole hog they do PORK Butts, PORK ribs, brisket, and chicken. But most of those guys can do whole hog to.
I like all BBQ but your mustard/vinigar base is my least favorite. I still like it though. I had some in Spartansburg SC last summer that was good. I even know a few teams from SC./NC

I LIVE RIGHT BELOW MEMPHIS WHERE THERE IS A BBQ JOINT ON EVERY CORNER SEEMS LIKE. BUT BY FAR THE BEST BBQ I HAVE EVER LAID A LIP ON WAS AT McCLARDS BBQ IN HOT SPRINGS ARK.

I am just kiddin ya I have had really good Q from the north too. I have never been to the East yet but have had Carolina style and really liked it.

Randy's B-B-Q in Denison, Tx. the best I ever ate. I've had Q from all over but you can't beat Tx Style where beef is king. Don't get me wrong I'll chow on some hog meat in a second

I am a backyard bbqer but I will put my ribs up against anybody's ribs!!!! And yes you can eat them with a fork, to the profesionals this means they are over done but I have never had anybody complain about my ribs. And I cook a pretty mean chicken leg quarter.

All this talk about BBQ has made me wanna head to the store... I will be back later.....

turkey meets smoke YUM

We are serving bbq turkey sandwiches for Sunday dinner, got to feed the in laws so I might as well have what I like. Slaw, pickles, chips and baked bean will be on the table also. Then birthday cake and ice cream....Mr. Seven Year Old is so to be Mr. 8 YRS. Had cut up 11 lb turkey in the Brinkman smoker for three hours last night. Filleted the thigh and breast meat off the bones before brining. It had been in salt, brown sugar brine since Sunday night. With the outdoor temp. at 10 F not much cooking got done but hickory and apple wood smoke got right where it was needed. It smelled so good, once or twice an hour had to go peek at the firebox and toss another chunk of wood in. Two hours more in a 350 F oven and we were done. Smelled like we had a campfire in the oven. Tonight will be the meat pickin and pullin party. Meat has to sit in storage bags until Sunday morning. Had to do it three days ahead because the weather is going to get bad and worse tonight and Saturday. We sliced up and snacked on smoked turkey gizzard last night.....delicious. I got to go get me a pork butt roast and fillet that puppy and dry rub treat it then invite it to take a smoke bath. Heavenly pork meat. Just had to share my latest bbq moment.

It sure was good and nobody showed up to eat so i was forced to eat too much and then i was too full to go huntin so I had to watch LSU whip up on the Aggies!
