Hello friends !!! ; )
It'S HOT .. Here ... It was 102 today that's without the heat index .. Thank goodness I didn't have to drive the jeep !! Brought the Bluetick inside (Roo ) for a little bit .. She's house broken .. but fed the redbones ice .. They love ice .. And cooled them down ..it's going to be in the 100's till Friday ..and for goodness sake the humidity is terrible .. Hahahaha .. Don't know why it seems cooler at dads .. Lol .. My ac inside would only cool down to 83 in the house .. I know I may need a bigger unit .. One day .,

John ... That little george coony is. Sweetheart !! He holds his own bottle and loves to play at night ..makes all kinds of sounds ... Sleeps during the day .. Lol .. He loves to hold things with his hands .. He's funny .. Christian don't like him to much ... He's seen some mean coons before.... Lol ..

Can't wait to see the pic's of the tractor .. And cruise !!

That's good memories of old Billie right there. About 15 years ago I bought a Marsh Tackey name Billie for to get me around in the woods when I was doing Environmental work. That marsh tacky did not weigh over 800 pounds is my guess. But old July who was fixing to sell him to me would not let me buy him before he showed off Billies extra talents. He couldn't praise him much for riding for he was the roughest riding horse good for purple plimples on your hiney more that any horse I ever stradled. So he brought out his family and the grandkids walked around under the ponies belly and hooked up the harness. Then they all jumped on and Billie drug sled all around with July trotting alongside saying GEE and Haw and STEP AROUND when they wanted to come back. So I bought him mostly cause the grandkids were down around hs ankles hooking every thing up. Oh yea, he had to show me how he could plow a straight line too but July had to trot and that is why he was seling him is because he had to trot but his mules did not make him trot. Anyway, I had a couple acres of sweetcorn needed layingby and he brought an 8 spike cultivater and layed it by in a heart beat, to me. I ended up buying the cultivcator, harness and even the brand new trace chains But JUly was in a gallop cause Billie liked to pull and pull fast and July never could break him out of it. That's why he was for sale so cheap according to July.

First time I took Billie on a job happened to be an island with Marsh all around. I stuck his head though the bushes and when Billie saw that marsh for the first time he just stood there and went to quivering. I let him enjoy the scenes till he finally quit.

Anyway, coming out, I stuck my two wheel drive Nissan and horse trailer so I got him out and hooked him to the truck but I did not have a collar so he was about to choke hisself. Just happened to be the tourist Carriage Company kept their draft horses on the same tract. So I barebacked on up to the barn and begged to borrow a collar. The young lady that was there looked at Billie and said "with that thing?' She said, I'll bring a horse out there to get you." . So I took the smallest collar , come to find out it hung most to his knees and she dressed up a big old draft horse and we proceeded. Anyway, I hooked the big horse to the bumper and he leaned into it but if he was pulling I'll kiss yo ---. I suggested we hook them both up and they snatched truck , trailer and all right out. By then me and her were getting along just fine. I gave her a wink and suggested we hook them ass to ass and just see what's what since we were on the back side of the place. She grinned back . The outcome of that experiment will remain a secret to my grave but I offered a new challenge to the Beaufort Water Festival with a Horse Pulling Contest concerning a Marsh Tackey but I never been took up on the offer.
Billie liable to be too old now anyway but he sure has been used alot as a beginner horse for a lady that teaches riding lessons. When those kids graduate off Billie, I sure bet they appreciate the lack of purple pimples. LOL

Chickpea Salad

Our Chickpea Salad makes a tasty, cool side dish for summer parties and picnics. It can also serve as a filling meal all on its own for when those summer days are just too hot to cook. We like to make it ahead to have in the refrigerator all week, scooping portions out as-needed for quick lunches on the go.

Salad Ingredients:

•2 cans chickpeas, drained
•4 roma tomatoes, minced
•1/4 large red onion, minced
•1 bunch cilantro, chopped
•1/2 small package of white mushrooms, chopped
•4 stalks of celery, washed and chopped small
•1 sweet red bell pepper, washed, seeded and chopped small
•1/2 tsp turmeric
•1 tsp ground cumin (or more to taste)
•1-2 tsp garlic powder (to taste)
•2 tbls sea salt
•1/2 tsp dried lemon thyme
•ground black pepper to taste

Dressing:

•1/3 cup Balsamic vinegar
•1 tbls lemon juice
•3-4 tbls French's yellow mustard
•2 packets of Splenda
Combine first 7 ingredients in a large mixing bowl. Sprinkle remaining salad ingredients over the top of the vegetables and mix well. Set aside. In another smaller bowl, combine ingredients for dressing and whisk thoroughly. Pour over salad. Cover and refrigerate overnight for best results. Stir just before serving.

Canned Apples

Prepared this way, these canned apples will have a jarred shelf life of about 18 months to 2 years- and require no special attention. Delicious in many recipes, we particularly enjoy the use of this recipe for apple-pie filling. Enjoy!

Ingredients:

•Apples! An average of 19 lbs is needed per canner-load of 7 quart jars. An average of 12 lbs is needed per canner load of 9 pints.
•Water or apple juice
1. Select naturally sweet apples- not something like Granny Smith. Gala, Fuji, and Rome are excellent choices. Honeycrisp and Pink Lady are also sweet, flavorful apples.

2. Wash the jars and lids.

3. Wash and peel the apples. Once peeled, remove any remaining brown spots. Core and slice into 1/4 inch - 1/2 inch thick pieces.

4. In a large pot of boiling water OR apple juice, blanch the sliced apples. Place in boiling water and after the water returns to a boil, boil for about 5 minutes. Stir occasionally to prevent burning. Drain.

5. Fill jars with apple hot slices, leaving about 1/2 inch from the rim. Fill the jars to within 1/2 of the top with hot water. Wipe any spills from the top, seal the lid and tighten the ring around them.

6. Place in the canner and keep covered with at least 1 or 2 inches of water and boil for 20 minutes.

lol yea he gets a lot of attention and loves to play !! He's a 100 miles an hour !! Didn't know that they will use a water pale as a littler box tho .. If I place the water pan on top of the totty he'll being to use it there and then I'll lift the lid up and he'll start using the potty to use the bath Room .... Wow !! Glad he's not at MY house !!!!!!
