Used to eat coon all the time. Treed some young ones one night, told my brother-in-law to tie the dogs back that I wanted one to eat and didn't want it tore up. When I gutted it you couldn't hold all the round worms in it in both hands.Haven't ate one since. And by the way, a coon will eat anything a opossum will eat.
we made some jerky once with it and it was pretty good stuff.
