Coon recipe

My neighbor in Kentucky for several years was the local Sheriff and he had the best recipe for Coon I've seen.

1. soak the coon in salt water overnite.

2. find a fresh used bourbon barrel stave and cut off about 18 inches of it.

3. put the coon on the stave and cover it with a lot of onions, red pepper, whole garlic cloves and a little sage.

4. bake in a 350 degree oven for one hour.

5. let rest for about a half hour.

6. throw away the coon and eat the barrel stave!!!

If you don't want to bother with par boiling just throw it in a crock pot and slow cook it all day.

I've also put a few through my meat grinder and made chili. I think most folk complaining about them tasting bad just don't know how to process and cook wild meat.
