A. Peacock can be cooked very like turkey, except that it tends to be dry-fleshed and requires frequent basting with butter. Don't know where you got your peacock, but every time we see one of those fine-feathered fellows strutting around the local zoo, we can't help thinking how handsome he would look on a silver serving platter!

Roast Young Peacock
Slinge, draw, and stuff a peacock with forcemeat. Truss it for roasting and roast it in a moderate oven (350° F.) for about 20 minutes per pound, or until well browned and tender, basting very frequently with melted butter. Serve hot with pan gravy or cold with chopped jelly and cold sauce poivrade.

To make the forcemeat, soak 1 pound of bread crumbs in milk and press out the moisture. Combine it with 1 pound of chopped beef marrow, the peacock liver, finely chopped, 10 shallots or 1 onion, chopped and stewed in butter until tender, 1 tablespoon each chopped green celery leaf and parsley, and a little sage, marjoram, and thyme. Season with cayenne, nutmeg, salt, and pepper to taste.

Sauce Poivrade
To 6 tablespoons olive oil in a saucepan, add 1 carrot and 1 onion, both diced, and cook until they are golden-brown. Add 1/2 cup flour, mix together, and cook until the flour turns golden-brown. Add 3 cups brown stock or double-strength beef consommé and 1 cup tomato purée, mix well with a whip, and cook, stirring until well blended. Add 3 or 4 sprigs of parsley, 1 bay leaf, and a little thyme. If any bones of the game are available, brown them well in the oven and add them. Cook for 1 1/2 hours, stirring occasionally and skimming as needed.

Put 1/2 cup vinegar and 6 peppercorns, crushed, in a pan and cook until the liquid is reduced to about one third the original quantity. Strain the sauce into the reduced vinegar mixture and cook all together for about 30 minutes, skimming carefully as the fat rises. Add 1/2 cup red wine to finish the sauce.

BACK IN MY MUCH YOUNGER DAYS I HAD GOTTEN A DATE WITH THIS CUTE GAL WENT BUY ONE OF LOCAL DRIVE INNS SAW THUNDER ROAD WAS PLAYING SO IPULLED IN PARKED UP CLOSE TO FRONT SHE WANTED TO KNOW WHY SO CLOSE I SAID SO WE COULD SEE GOOD . ALL THROUGH THE MOVIE SHE WANTED TO KNOW WHAT I WANTED SEE . FOR SOME REASON SHE WOULDNT GO OUT AGAIN

Hey Everyone

Long day..now yesterday... akkk...

SO... I guess I spoke too soon on Web doing well on new dose phenobarb. He had a pretty good seizure this am. I was outside trying to keep the 2 dogs seperated and got a bit panicked(I usually do well in emerg. situations) In retrospect I should have picked up the little dog, ran in and crated her and gone back to Webster(duh).... lots of vet phone calls and discussions and we will be heading to the Big Hospital at Tufts tomorrow aftn.... yippee. Anyway... in all the excitement I gave HIM his meds and forgot all of mine but the morning one...BIG oops. I am wide awake at moment since i took my ritalin after 6 pm.... Had to take it though cause skipping gives me withdrawal headaches.... SO, Here I am catching up on here...NOW...

Also, my son's fiancees mother is in the hospital with some sort of nasty infection in a cut on her knee... they have a team of Drs working with her and the family is worried. If you could all send her a kind thought and a big old prayer it would be appreciated!
Well, I'll be catching up on here now... see who did what where in all the breeds... and I sure HOPE I get some sleep eventually! lol... Wish I could go out coonhunting!

38 degrees and sweated down whatever time it is. Quit ya'lls nasty minds. I bin out covering red taters with dirt and tomatoes and peppers with cups and I'm just goimg to take achance on the skippy rows of sweetcorn I planted back in February cause I knew it was early but I wanted to take a chance. Corn Ain't but a 16 of an acre anyway so what the heck? 38 degrees and holding but 37 bees de majic number. 231 AM de sun comin up an I must be gone. Recon I'll fineout bout noontime.
